Australian Himalayan Foundation Curry Night

Helping these communities live their ‘Best Life’ is a small, sustainable way we can give back.Friday, May 29th 2020 is "Himalaya Day" - the anniversary of Sir Edmund Hillary and Tenzing Norgay's first summit of Mt Everest in 1953, 67 years ago. So we will be joining our friends (virtually) from the Australian Himalayan Foundation for their Himalaya Day Dinner at home.Our love affair with the Himalayas goes way back...The Himalayas are in the background of these photos taken when we drove through Pakistan in 2015. When we heard about this curry night event we reached out to our friend from Pakistan for curry recipe inspiration.We’re all set for our curry cook up and thought we would share the recipe with you as inspiration to join in!
RECIPE “PAKISTAN CHICKEN KADHAIE CURRY”INGREDIENTS:Chicken 1.5-2kg, cut into 8 pieces1 x onionGarlic paste or half a garlic clove2.5 cups of oilChicken Kadhaie Masala or find chat Masala from any Indian or Pakistani store3-4 x tomatoes6 x green chillies3 x lemonsMint leaves to tasteMETHOD:Place half a cup of oil into a large pot on the stove, medium heatChop half big onion or a small oneAdd to pot and cook for 2 minsThen add chicken piecesAdd garlic pasteSprinkle salt to taste (quarter teaspoon)Add half cup oilThen start frying them like chipsKeep the stove on medium heat for 4min while fryingThen drop the heat to low and cover with a lidLeave for 5-7minStir to ensure chicken is covered in sauceAdd chop tomatoesAnd add half teaspoon masalaSqueeze lemons on top, make sure there are no seedsMix, then add a half a cup of oil again if necessaryCover the pot againAnd let it cook for 5-8 minutes until tomatoes are softTake off the coverThen shuffle the chickenIts time to dry the water produced by tomatoesCut green chillies in half and addMix and fry until you see only 25% gravyServe it in the same potSprinkle mint leaves on topGET INVOLVED!Don't forget to register for this event (it's free) + learn more about the Australian Himalayan Foundation's virtual Himalaya Day Dinner here.
